
Garam Masala Maduros
Ingredients
- 2-3 very ripe plantains should be heavily spotted or fully brown/black
- 1/2 tsp salt
- 1 tsp garam masala
- 1/4 tsp red chili powder
- 1/2 tsp cinnamon powder
- 1/2 tsp ginger powder
- 2-3 tbsp melted coconut oil or cooking oil of choice
- Yogurt drizzle I use 1/2 cup Straus European style whole milk yogurt + 1 tsp lemon juice and crumbled queso fresco for garnish (optional)
Instructions
Air Fryer Instructions:
- Peel the plantains and chop them into 1/2 inch thick slices
- Place them in a bowl and toss with all spices and salt and oil
- Place in the air fryer at 400 degrees for 15 mins flipping halfway. Make sure they’re all hitting the base of the fryer. If not, fry in 2 batches.
- Remove and drizzle with beaten yogurt and crumbled queso fresco or cotija cheese.
- Serve immediately!
Pan fry instructions:
- Heat oil on a large pan on medium heat ensuring oil coats the surface of the entire pan
- Place each plantain slice on the pan so that it fully touches the pan. Pan fry each side for 3-4 minutes or until crispy and browned (not burned!). Remove each piece when done cooking and place it on a plate.
- Keep pan-frying until all plantains are cooked.
- Remove and drizzle with beaten yogurt and crumbled queso fresco or cotija cheese.
- Serve immediately!
