Garam Masala Maduros

Ingredients
  

  • 2-3 very ripe plantains should be heavily spotted or fully brown/black
  • 1/2 tsp salt
  • 1 tsp garam masala
  • 1/4 tsp red chili powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp ginger powder
  • 2-3 tbsp melted coconut oil or cooking oil of choice
  • Yogurt drizzle I use 1/2 cup Straus European style whole milk yogurt + 1 tsp lemon juice and crumbled queso fresco for garnish (optional)

Instructions
 

Air Fryer Instructions:

  • Peel the plantains and chop them into 1/2 inch thick slices
  • Place them in a bowl and toss with all spices and salt and oil
  • Place in the air fryer at 400 degrees for 15 mins flipping halfway. Make sure they’re all hitting the base of the fryer. If not, fry in 2 batches.
  • Remove and drizzle with beaten yogurt and crumbled queso fresco or cotija cheese.
  • Serve immediately!

Pan fry instructions:

  • Heat oil on a large pan on medium heat ensuring oil coats the surface of the entire pan
  • Place each plantain slice on the pan so that it fully touches the pan. Pan fry each side for 3-4 minutes or until crispy and browned (not burned!). Remove each piece when done cooking and place it on a plate.
  • Keep pan-frying until all plantains are cooked.
  • Remove and drizzle with beaten yogurt and crumbled queso fresco or cotija cheese.
  • Serve immediately!
