2-3very ripe plantainsshould be heavily spotted or fully brown/black
1/2tspsalt
1tspgaram masala
1/4tspred chili powder
1/2tspcinnamon powder
1/2tspginger powder
2-3tbspmelted coconut oilor cooking oil of choice
Yogurt drizzleI use 1/2 cup Straus European style whole milk yogurt + 1 tsp lemon juice and crumbled queso fresco for garnish (optional)
Instructions
Air Fryer Instructions:
Peel the plantains and chop them into 1/2 inch thick slices
Place them in a bowl and toss with all spices and salt and oil
Place in the air fryer at 400 degrees for 15 mins flipping halfway. Make sure they’re all hitting the base of the fryer. If not, fry in 2 batches.
Remove and drizzle with beaten yogurt and crumbled queso fresco or cotija cheese.
Serve immediately!
Pan fry instructions:
Heat oil on a large pan on medium heat ensuring oil coats the surface of the entire pan
Place each plantain slice on the pan so that it fully touches the pan. Pan fry each side for 3-4 minutes or until crispy and browned (not burned!). Remove each piece when done cooking and place it on a plate.
Keep pan-frying until all plantains are cooked.
Remove and drizzle with beaten yogurt and crumbled queso fresco or cotija cheese.
Serve immediately!
