
Santorini Greek Salad
Ingredients
- 1/2 English cucumber diced
- 1- pint cherry or grape tomatoes halved
- 1 green pepper diced
- 2 tablespoons capers
- 1/2 cup kalamata olives
- 1/2 cup diced red onions
- 100 grams or 2 thick slabs of feta cheese
- 4 tablespoons high-quality extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Parsley optional for garnish
Instructions
- Chop all vegetables and add to a bowl
- Toss with olive oil, vinegar, salt, pepper, oregano
- Cut two thick slabs of feta and lay on top of the vegetables
- Sprinkle a little extra dried oregano on feta
- Garnish with parsley and an extra drizzle of olive oil if desired
- Serve chilled!
