Creamy Avocado Pesto

- 1 ripe avocado
- 1/4 cup walnuts or nuts of choice
- 2-3 large cloves of garlic peeled
- 3-4 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- Place all ingredients in a blender or food processor and blend until creamy and fully combined.
- Enjoy on top of gluten-free noodles (zoodles, kelp noodles, sweet potato noodles, etc.) or enjoy as a dip with crackers/veggies!
