Strawberry shortcakes are just beautiful bites of heaven, and they’re even better with the fragrant rose and notes of cardamom that remind me of Indian desserts. I infuse these beautiful flavors in a dairy free whipped cream that compliments the sweet shortcakes and the strawberries so well. I love garnishing the shortcakes with rose petals for a perfect Valentine’s Day or date night treat, perfect for two. These are refined sugar free, dairy free, eggless and gluten/grain free. Rose Cardamom Strawberry Shortcakes

Ingredients
Shortcakes
- 1 2/3 cups superfine blanched almond flour I use Bob's Red Mill
- 2 tbsp tapioca flour I use Bob's Red Mill
- 4 tbsp coconut sugar
- 1 1/2 tsp baking powder
- pinch of salt
- 1 tsp vanilla extract
- 3 tbsp filtered water
- 3 tbsp melted ghee, coconut oil or avocado oil
Strawberries
- 1 cup sliced strawberries; stems removed
- 2 tbsp coconut sugar
Rose Cardamom Whipped Coconut Cream
- 2 cups whipped coconut cream I love Downshiftology's recipe (double the recipe for this) or you can buy SoDelicious or Trader Joe's whipped coconut cream (not refined sugar free). NOTE: If making from scratch, chill coconut milk cans in fridge night before you want to make this.
- 2-3 tsp rose water Depending on how strong you want rose flavor to be
- 2 tsp ground cardamom
Instructions
Shortcakes
- Preheat oven to 350 degrees F
- Line a baking sheet with parchment paper.
- Whisk all dry ingredients together in a large mixing bowl. Then add in all wet ingredients and mix with a silicone spatula until a dough forms.
- Divide dough into four equal parts and roll into balls.
- Place balls on baking sheet and slightly flatten each one with your hand.
- Bake for 20 minutes until slightly cracked on top and cooked through. Remove and let cool completely on a cooling rack.
Strawberries
- While shortcakes are baking, place sliced strawbrerries in a bowl and mix with coconut sugar. Set aside on counter until ready to use.
Rose Cardamom Whipped Coconut Cream
- Make whipped coconut cream according to recipe instructions. Add rose water and cardamom and mix with stan mixer until fully combined and smooth. Taste and adjust sweetness, rose water and cardamom to your liking.
Assembling Strawberry Shortcakes
- Take a shortcake (do not slice in half) and spread a thick layer of 1/4-1/2 cup whipped cream on top. Add a few strawberries on top of the whipped cream. Place another shortcake on top and add more whipped cream and strawberries. Repeat this process for the other two shortcakes to make your other serving. NOTE: You may wish to slice the shortcake in half, and use each half to make one serving. I find it to be too thin so prefer to use two whole shortcakes to make one serving. It is totally up to you!
