Wash and dry the zucchinis thoroughly. They should not have any water on them!
Preheat oven to 400 degrees F.
Cut zucchinis into strips that are 2 inches in length, and 1/4 inch in width. Make sure they are this thin otherwise they will not get crispy!
Place zucchini pieces onto a baking sheet lined with parchment paper. Make sure they have room so you may need two baking sheets.
Massage olive oil, spices, and salt into zucchini pieces.
Sprinkle 1/2 cup of almond flour on zucchini pieces.
Place in the oven for 50-60 minutes, flipping halfway.
Serve hot with yogurt dipping sauce (instructions below), tzatziki sauce, or ketchup!
For Yogurt Dipping Sauce:
Take 2 cups of Siggi’s plain strained Icelandic yogurt and mix with 1 tbsp of grated garlic, 1 tbsp of lemon juice, and salt and pepper to taste.
