Santorini Greek Salad

Ingredients
  

  • 1/2 English cucumber diced
  • 1- pint cherry or grape tomatoes halved
  • 1 green pepper diced
  • 2 tablespoons capers
  • 1/2 cup kalamata olives
  • 1/2 cup diced red onions
  • 100 grams or 2 thick slabs of feta cheese
  • 4 tablespoons high-quality extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parsley optional for garnish

Instructions
 

  • Chop all vegetables and add to a bowl
  • Toss with olive oil, vinegar, salt, pepper, oregano
  • Cut two thick slabs of feta and lay on top of the vegetables
  • Sprinkle a little extra dried oregano on feta
  • Garnish with parsley and an extra drizzle of olive oil if desired
  • Serve chilled!
