Ingredients

English cucumber diced

cherry or grape tomatoes halved

green pepper diced

tablespoons
capers
1/2
cup
kalamata olives
1/2
cup
diced red onions
100
grams
or 2 thick slabs of feta cheese
4
tablespoons
high-quality extra virgin olive oil
1
tablespoon
red wine vinegar
1
teaspoon
dried oregano
Salt and pepper to taste
Parsley optional for garnish
Instructions
Chop all vegetables and add to a bowl
Toss with olive oil, vinegar, salt, pepper, oregano
Cut two thick slabs of feta and lay on top of the vegetables
Sprinkle a little extra dried oregano on feta
Garnish with parsley and an extra drizzle of olive oil if desired
Serve chilled!
